Peach and Raspberry Jam:
In a saucepan, add in the vita•smoothie 1-step smoothie pucks along with chia seeds, lemon juice, and honey. Bring everything to a boil and cook for 10 mins on medium-high heat or until you see a jelly-like consistency. If needed add in 1 tbsp of corn flour slurry and wait for a boil. Once thickened, switch off the flame and let the jam cool down, this could take 2-3 hours.
Cream cheese filling:
In a bowl, add the cream cheese and sugar, using an electric whisker, and whisk them together until fluffy.
Now take 1 full sheet of puff pastry, and with the help of a pizza cutter divide it into 3 equal parts lengthwise. On the mid-bottom of the pastry sheet, add 1 tbsp of cream cheese and 1 tbsp of Peach and Raspberry jam, and cover the pastry with the other end. Press the sides with your finger and seal the pie using a fork giving it some beautiful design. Using a knife, make two incisions on the pie, apply some egg wash and bake these in a preheated oven at 400’F for about 15-20 mins or until the pies are nice and golden. Enjoy!
